BUT INSTEAD OF GOING INTO BARRELS FOR AGING, THIS DISTILLATE IS COLD FILTERED THROUGHOUT THE WINTER MONTHS AND THEN LEFT TO MELLOW THROUGHOUT THE SPRING.
